To begin, we combine a carefully balanced blend of potato starch, tapioca starch, chickpea flour, rice flour, and maize flour. Together, these ingredients create a soft, light crumb while ensuring the structure needed for a perfect loaf. At the same time, they provide a mild, neutral base that allows the seeds and natural flavours to shine.

Next, we include a generous 13.5% seed mix made up of sunflower seeds, poppy seeds, pumpkin seeds, teff, and flaxseed. These seeds add a satisfying crunch, nutty flavour, and extra texture in every slice. Consequently, each bite delivers both nourishment and a hearty, rustic feel.

We then add yeast and sugar to help the dough rise beautifully, creating a light and airy loaf. In addition, psyllium husk powder and xanthan gum work together to provide structure and elasticity, helping to replicate the texture of traditional bread.

To enhance flavour, we include salt and a touch of carob for subtle depth and richness. Vinegar powder is also added to support dough development and improve overall texture during baking.
