We start with Freee Plain White Gluten Free Flour and a touch of xanthan gum. Together, they give our cookies the structure and bite you expect from a classic sandwich cookie. We then add rich cocoa powder for a deep chocolate flavour and that signature dark finish. Baking powder and bicarbonate of soda help create a light, crisp texture. Meanwhile, a pinch of salt balances the sweetness and makes the cocoa flavour shine.

Next, we cream butter and white sugar until smooth and creamy. Fresh egg adds richness and helps bring the dough together. We also add clear vanilla essence to round out the flavour. Then, a splash of full cream milk keeps the dough soft and easy to work with.
